Extraction and Physicochemical Characterization of Chitosan from Pink Shrimp (Parapenaeus longirostris) Shell Wastes

This study aimed to evaluate the extract of chitosan obtained from pink shrimp (Parapenaeus longirostris) shell wastes in Balıkesir, Marmara Sea Turkey, and characterize its quality. The physicochemical properties biopolymer such as moisture content, solubility, degree deacetylation (DD), molecular weight (MW), particle size, bulk density, pH, water-binding capacity (WBC), fat-binding (FBC), color attributes were examined. was characterized by Fourier transform infrared spektrofotometer (FT-IR), Dynamic light scattering (DLS), Thermogravimetric measurements (TG/DTA/DTG). Results indicated that yield content 18.82% 3.62%, respectively. DD 81.50% while solubility 86.79%. MW found be 310 kDa. presence amino group confirmed FT-IR spectra synthesized chitosan. showed had low thermal stability. SEM analysis revealed surface morphologies consisted relatively smooth nanofiber structures. Based on characteristics present study, could a potential source produce high-quality for industrial applications.
